Okay, so I was going to do one of the usual polish sausage, onion, and green pepper sautees, but the green peppers felt squishy.

So, I started craving and looked around.

Here's what I ended up with:

8 polish sausages cut up into rounds.
3 potatos, with skins on for the nutrients, cut into medium chunks.
1 large yellow sweet juicy onion.
2 teaspoons minced garlic
2 pinches of italian spices
a few dashes of pepper, a few dashes of powdered cayenne.

Then shortly before its done cooking in the skillet (didn't time it, just eyeballed) added 4 loose handfuls of organic, fresh, baby spinach.

This was cooked in one of those stand alone skillets with a lid, as I finally got one of those. (My family did much culinary goodness with them growing up.)

I've not experimented like this in a while, so I'll have to do it more often ;-)
